Artichoke Salad (raw vegan)

Prep Time: 10 minutes

Eat time: like 3 seconds

Serves 1 or 2 depending on your ability to share:

1/2 can of artichoke hearts

1 heirloom tomato

1 avocado

sesame seeds

1 handful baby spinach

balsamic vinaigrette

1 stalk of celery

black pepper

lemon juice

Drain a can of artichoke hearts. Cut the ends off to separat the leaves a bit. keep the tips as well. I chop the hearts in half and mash a bit to separate leaves.

Mash a peeled and de-seeded avocado with a fork but keep some chunks

chop an heirloom tomato to create large diced pieces

mince a stalk of celery

In a bowl fold in avocado, hearts, celery, and lemon juice.

Plate a handful of baby spinach

ile the salad mix onto the leaves.

Sprinkle sesames seeds on top

Add tomatoes around the base of the salad. Drizzle balsamic vinegar on top. (you may add parmesan shavings to the salad also)

Pepper and Enjoy!
